You can now post non-square photos on Instagram

On Instagram's recent update, it now allows you to post non-square photos by clicking on this icon.

Usually we use third party apps to deal with this problem, like the Layout App they released to create collages. The only downside it that you can only put it in the center and by default the background on the empty spaces will be white.
